Mochi



Yeah yeah! Found and tried! I love it. Better than the best bakery in my own hometown. Haha. Thanks to Lisa for this easy peasy recipe.

I make 5 big mochi out of this recipe.

For the dough or skin:
1 cup of glutinous flour
1/8 of sugar
2/3 cup of water
few drops of food colouring - I omit this and replace it with latte and cocoa powder
tapioca flour for dusting

For filling:
peanut butter or
nutella or
bars of chocolate or
red bean paste

-I use peanut butter together with a half piece of chocolate as the filling. They melt inside the skin and taste heavenly.


Method
  1. In a microwaveable bowl, mix the glutinuous flour, sugar and water. Stir until smooth. Add colouring if you wish. 
  2. Place in microwave oven and heat on High or Medium High for 1 minute. Stir immediately (the dough will be a little bit lumpy). Return to the microwave and cook for another 1 minute or more. The dough will rise or inflate. 
  3. Remove the bowl from microwave, dust your hand with tapioca flour and scoop about 1/2 - 1 tbs of dough. Make it into disc shape and place the ball shape filling in the center and wrap the dough around it. Quickly roll it into the tapioca flour and shake off the excess. 
For decorative toppings, moist the top of the mochi and sprinkle some roasted sesame seeds or grounded peanuts or green tea powder or whatever you like.
