Ma Lai Koh

Bought custard powder and decided to try this recipe first. It reminds us of the 'ma lai koh' we ate in London 6 years ago.

Recipe adapted from Pig's corner

=Ingredients=

110g plain flour
1 tbs custard powder
3/4 tbs baking powder
80g brown sugar - I use 75g
30g unsalted butter - melted
2 tbs vegetable oil
1 tsp vanilla essence
90ml milk
2 medium eggs



Method
  1. Sift flour, custard powder and baking powder into a large mixing bowl.
  2. Add in sugar and mix well.
  3. Add melted butter, vegetable oil, vanilla essence and milk, beat until well combined.
  4. Add in eggs, one at a time. Keep stirring until a smooth sticky batter.
  5. Leave it there for 2 1/2 hour before steaming (suggestion from the Pig's reader) - I should try to leave it for 3 hours next time to see the difference.
  6. Pour into lightly greased tray and steamed over high heat for 30 minutes.
  7. Best eaten while it is still hot.
