The mango slices are more than the meat which I like
Ingredients:
1 mango (380g - 400g)
200g chicken breast
50g almonds
Marinade:
2 tsp light soya sauce
1/2 tsp sugar
1 tsp cornflour
1/2 tsp Shao Xing wine
1 tsp water
Method
- Cut mango lengthwise into strips or cubes.
- Rinse chicken and drain well. Remove fat. Julienne into 3 cm strips. Mix with marinade for 20 minutes.
- Place almonds in preheated oven at 180C about 5-10 minutes, or until fragrant. Make sure not to burn them (I burnt some of mine. Should take extra caution next time). Let cool. Use hand to crush them (easy job).
- Heat 2 tbs of oil over medium-high heat. Stir-fry the marinated chicken until done. Turn off the heat. Add mango, quickly combine all the ingredients. Dish up and sprinkle roasted almonds.
